Daikokuya

Despite the many ramen bars on Sawtelle, Daikokuya puts up a good show.

Review

  • The broth is creamy, flavorful, and rich. It has a fantastic pork tonkotsu flavor, and it not too salty. The color is nice and milky, and is served hot, but not too hot. It has excellent flavor that is not overpowering. Well done in my books.

  • The noodles are medium in thickness and have a nice firmness and chew to them. They are the denser noodles that are a bit more doughy in texture. They have good noodle flavor, which is evident through the firmness and style. I am not exactly sure if the noodles are home made or not. But they seem very familiar. Regardless, well done. What can improve these noodles is to have a more distinct chew and snap with the noodles, rather than feeling like you are chewing half cooked noodles.

  • The noodles take the show on this duet. The noodles have prominent taste and texture to hide the broth. The broth provides that rich warmth, but the noodles are the majority of the combo. They stand out the most. Fortunately, they are both very good on their own right, so the two together are not much better nor worse.

  • The chashu is mild in flavor. It is not extremely fatty, but it is not dry either. There is no extreme flavor, and can be over powered by the broth. However, it is still very tasty. The bowl only comes with one small piece, but the small piece is still pretty good.

  • The yolk of this egg dissolved. They have somehow found a way to solidify the white part of the egg, and leave the yolk like a cream. It is more like a sauce that the egg comes with. The flavor is appropriate but has a different profile. It mainly tastes like soy. Nothing too strong though. The egg is comparable in quality of that I would expect from a properly prepared egg.

  • There are bean sprouts in this bowl, and they are like glitter. It gets everywhere. To me, it is extremely frustrating when you expect the chew of noodles and get a crunch instead. For this reason, I really hate bean sprouts in ramen.

Overall: 7.5/10

Would recommend. The broth is the best part of this bowl. Great in flavor and texture, and well prepared. The noodles are not original but still very good regardless. They have a firm chew but are a bit doughy. The chashu is tasty, but not very fatty or rich, and is also quite small. The egg is well done, and even below what I would consider soft boiled. The toppings included green onions, bamboo, and bean sprouts. But I hated the bean sprouts. This bowl is very good and stands up to the tough competition just walking distance away. For a great bowl that does everything well, but with nothing to blow your mind, this is it.
