Review

The menu is very big, so I had to ask a waitress for some explanation. Some items on the menu are different variations, or different items entirely such as curry ramen. The #31 Ajisen Best Combo is the ramen that has all three of the meats with a tonkotsu broth. There are different options with spice, or seafood, or individual meats, and different soup bases. I think that more options are more of a pain.

  • Reminds me of a soy base soup. I feel the soy flavor is more prominent than the tonkotsu. It had good color though. The creaminess is kind of on the light side.

  • Noodles are quite good. They have a good firm chew, and good width. They are straight in shape, and have no curl. But they are a good size and the flavor is there. Not the best flavor, but still tastable.

  • The flavor seems to blend out and be pretty flat. The broth takes over the noodles. While the noodles have good texture, the soy base of the broth becomes prominent. I guess it just isn’t creamy enough for me.

  • At first it seemed promising because it was the properly rolled pork belly, but the flavor is not good. It has the flavor that reminds me of paper towels. It doesn’t melt in your mouth, so it isn’t cooked right. It seems bland and dry. They also have a premium pork. Probably 5/10. Seems out of place, and acts like shaved ham, but with a texture more similar to brisket. The pork ribs are actually decent. 7/10. These actually melt in your mouth, but the flavor is more consistent with pork ribs (which is what they are) rather than the fattiness that I like to spoil myself with.

  • Okay, but cold? The yolk is the right texture, but aside from that, it doesn’t have more flavor, or seasoning. Also, it was served cold which was weird.

  • Pretty simple. They don’t get in the way, but don’t add much. The green onion is cut thick, and the mushroom is served as a clump and stays that way.

Overall: 6.5/10

Would not recommend. While the bowl was okay to eat, there is absolutely nothing special about this bowl. There are multiple places in the area that are better in all areas and are equal in price. The broth did not impress given their description. It didn’t have that creamy richness that one should expect from a good tonkotsu. The noodles were perhaps the best part of this dish. They have a good thickness. And okay flavor, but sadly the rest of the team couldn’t keep up. The meats were all disappointing. It seems like they were trying to toss on every type of pork, with out focusing on making it good. I would prefer they focus on one meat and make that one good. Finally, the egg added nothing special other than the fact that it was an egg.
